The one I remember most was my 5th grade (age ~10 for those who don't know the US system) science fair one on pendulums. Had a bunch of different lengths and weights to prove that it doesn't matter how heavy the weight is on the end or how high you drop it from (within reason), just how long the string is.

We had a bunch in chemistry in high school...nothing really sticks out. Though in first honors physics and then AP physics we built Gravity Cars - they had to be under a certain size and weight and could only gain speed by rolling down a ramp. The goal was to see how far it could go down the hallway within a track (tape to keep it within a certain width). We were the first AP class to do it, and it was amazing to see how much learning more about rotational dynamics did. My friend and I utterly smashed the record for how far it went down the hallway before leaving the track.
