Since the pandemic lawyers have been using a lot of different combinations of technology to do their day jobs. I haven't seen any trial lawyers use a reMarkable, but it's been recommended by a few part time judges that I know for my judicial work, because apparently it's very good at helping you to amend PDFs in cases (like court orders) and then sending them straight on to the court office to get them issued. A very niche use and of no relevance to anyone on these forums, but it's the one context in which I've used one. It's a pretty nifty device, but not one that I'd get use out of personally.
