I found this video to be a bit disturbing. Turning a bunch of dead crabs into an action figure....

I'd say you're right, but it's also somehow fascinating and intriguing as hell.

It's not like we haven't killed and skinned animals to then creatively cut those pieces and don them as apparel.

I think it depends on whether these crabs were specifically killed in order to make them action figures.. or if they were eaten and someone took their shells to make action figures with them..

I eat crabs but I definitely wouldn't recycle the shells for anything but I heard they make good fertilizer so maybe this is within the same realm..?

I suppose it's creative. It's not something I'd do, but as @Jawneh said, it's not unheard of for people to repurpose the skin and bones of animals, so I guess crab shells are in that same vein
